Healthy Anzac Biscuits – dairy free, gluten free, egg free

I have one daughter that’s fine with dairy and gluten and another that doesn’t tolerate it so well. It’s not so easy making different meals for them both, and when it comes to baking I haven’t found many recipes that is a hit for them both.

These biscuits are!

It’s also a fun recipe to make with children, the whole play dough texture of cookies works well for entertaining children.

I created the recipe and here it is:

1 cup Gluten-Free SR Flour

1/2 cup oats

1/2 cup quinoa flakes

1/2 cup white chia seeds

1/2 cup shredded coconut

1/2 cup raw sugar

120g Nuttelex (dairy free spread)

Milk of some type (Cow, Rice, Soy -optional – if needed)

1. Preheat oven to 180 degrees celsius. Line baking tray with baking paper.

2. Add all dry ingredients to large bowl.

3. Melt Nuttelex and add to bowl.

4. Mix together. If it looks too dry, add some milk or water.

5. Put little amounts of mixture on baking tray and flatten down a bit.

6. Bake for 20 minutes. Cool on tray for about 5 mins. Transfer to wire rack.

I hope the biscuits last long enough to make it into lunch boxes the next day. Ours didn’t!

It’s so my type of recipe as it is low fuss and minimal effort.

If you are a coeliac, obviously get rid of the oats all together. Replace with more quinoa flakes or be creative and see what other alternatives you can find 😉
